Basic Green Chile Sauce

ingredients
8 ounces New Mexico green chilies (e.g., Hatch, Anaheim, Big Jim's), roasted, peeled and chopped
1 3/4 cup chicken stock
2 tablespoons butter or margarine
2 teaspoons New Mexico green chili powder
1 tablespoon cornstarch
1/2 cup favorite shredded cheese

directions
Melt butter in a saucepan over medium-high heat. Add chopped green chilies and saute for 1-2 minutes.
Add chicken stock and green chili powder. Cook on medium-high for 5 minutes.
Add cornstarch to a little cold water and mix. Stir into pan. Bring to a boil, then remove from heat. Salt to taste.
Add shredded cheese and stir until fully incorporated.
Eat alone with tortillas, use as sauce to smother meat and eggs, or add to burritos.

This recipe was great and the only reason it gets 4 stars instead of 5 is I felt is was not thick enough. Next time I will add half the water to the corn starch. I did not add salt (chicken broth had enough) nor did I use the cheese. I just thought it should of been a bit thicker, otherwise it was yummy!!!
