Classic Rice Pilaf

ingredients
2 tablespoons butter or margarine
1 cup uncooked regular or converted white rice
1 small onion, chopped
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon dried thyme leaves, crushed (optional)
1 3/4 cup chicken broth
1 teaspoon chopped fresh parsley (optional)
directions
Melt butter in 2-quart saucepan over medium-high heat and cook rice, onion, salt, pepper and thyme, stirring occasionally, until rice is golden, about 4 minutes.
Add chicken broth. Bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Let stand 5 minutes. Stir in parsley.
