INGREDIENTS:
6 egg yolks
1 pound salted butter (no substitutes)
1 teaspoon cayenne pepper
1/4 cup lemon juice
DIRECTIONS:
Take the one butter and cut it into small chunks(set aside for later use). Put the egg yolks in a double boiling insert; add the lemon juice and cayenne pepper and stir with a fine whisk. Place the insert in the double boiler over hot (not boiling) water and stir constantly till it thickens up. Carefully take the butter chunks and add to egg mixture. Keep stirring until the butter is completely melted. Remove from double boiler and serve. ENJOY!!!

This sauce was incredibally easy to make, i had not made hollandaise sauce before, but it tasted better than most restaurants.

Use clarified unsalted butter to eliminate the solids. Add 1/8 tsp kosher or sea salt.
