ingredients
3 medium sized vine ripened tomatoes at room temperature
3 medium sized, yellow, vine ripened tomatoes at room temperature
2 ounces fresh basil
4 ounces mixed salad greens
4 ounces aged balsamic vinegar or reduced balsamic vinegar
2 ounces extra virgin olive oil or roasted garlic olive oil
kosher salt and fresh ground black pepper
10 ounces fresh mozzarella cheese, preferably Bocconcini mozzarella
directions
Thoroughly wash tomatoes and trim off bottom, remove core and lightly trim off top of tomato. Slice tomatoes three times horizontally giving you four slices per tomato.
Place tomatoes in mixing bowl with 3 oz. of balsamic vinegar and lightly season with salt and pepper, marinate for 5 minutes, set aside.
Cut mozzarella into any desired shape or leave whole, rub down with small amount of olive oil, set aside.
From this point forward you can plate this family style or individually if you desire. For family style, place all ingredients in a mixing bowl and toss thoroughly, place in decorative serving piece, serve immediately. You may want to cut the tomatoes different for family style, large dice or half moons will work.
For individual plates, start with greens and basil, then tomato and mozzarella, balsamic and olive oil, repeat. Stack should be 4 tomato slices high. Finish off with remaining olive oil, balsamic vinegar and season lightly with salt and pepper. Serve immediately.
