Luscious Lemon Cheesecake Recipe

Serves/Makes: 8
Ingredients:
16 ounces cream cheese, softened
1/2 cup sugar
1 tablespoon fresh lemon juice
1/2 teaspoon grated lemon peel
1/2 teaspoon vanilla
2 eggs
1 graham cracker crumb crust (6 oz. or 9 in. size)
whipped topping, thawed
Lemon slices
Directions:
Mix cream cheese, sugar, juice, peel and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Pour into crust. Bake at 350F for 40 minutes or until center is almost set. Cool.
Refrigerate 3 hours or overnight. Garnish with whipped topping and lemon slices.
