ingredients

1/2 cup flour
1/2 cup brown sugar, packed
1/2 cup Cheddar cheese, shredded
1/4 cup cold butter or margarine, cut in pieces
6 cups sliced peeled ripe pear
1 tablespoon lemon juice
1/2 cup brown sugar, packed
3 tablespoons cornstarch
1/2 teaspoon ground ginger
1 frozen pie crust, unbaked (9-inch size)

directions

In a small bowl, mix flour, first measure of brown sugar, and cheese. With a pastry blender or two knives, cut in butter until mixture resembles coarse crumbs; set aside.

In a large bowl, toss pears with lemon juice. In a small bowl, stir remaining brown sugar, cornstarch, and ginger until well mixed. Sprinkle over pears and toss to coat. Spoon into pastry shell. Sprinkle with crumb topping.

Bake in preheated 400 degrees F oven 45 minutes or until top is golden brown. Cover loosely with foil during baking if browning too quickly. Cool on a wire rack.

    Excellent! Easy to prepare. I made 5 different pear pies last week, and this was my favorite. I liked it so much I made a second one :) For the 2nd I subbed white sugar for the brown in the filling (because I ran out). It worked out well. The cheddar adds a bit of a omph over the regular pear pie, but it isn't enough for someone to ID. All the pies were a hit on 4th of July, and I think this one was either the most or the 2nd most eaten. As a side note- I wouldn't mention the cheddar unless people ask, because it took several minutes of reassurances before the first brave party goer took a bite.

    Had some pears about to go bad. What a wonderful pie. Probably in the top 4 best pies I have ever had. I am not fond of ginger, so I substituted cinnamon. You know its a good pie when it is gone the next day, and you make another within the same week!
