Crushed Pineapple Sour Cream Pie

ingredients
1 (9 inch) graham cracker pie crust, or regular baked crust
1 can (8 ounce size) crushed pineapple with juice
1 package (3.5 ounce size) instant vanilla pudding mix
2 tablespoons white sugar
1 cup sour cream
directions
In a large mixing bowl, combine pineapple, dry pudding mix, and sugar. Stir well, then add sour cream. Beat on low speed for 2 minutes.
Pour mixture into prepared pie shell. Chill before serving. Garnish as desired.

I drained the pineapple because i was afraid it wouldn't set up otherwise. It set up fine but I think I could have left a little of the pineapple juice in too and it would have set up. Tasty recipe.
This pie had a delicious taste and was so easy to make - but, I had it in the fridge overnight and it never set up. Do not know if our Florida humidity had something to do with it but if anybody has some suggestions, I would love to hear them. Cinch to make! Wonderful texture!
