ingredients
1 1/2 cup four-cheese Mexican shredded cheese
1 cup egg substitute
3/4 cup crushed seasoned croutons
1/2 cup chunky-style salsa
1/4 cup skim milk
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1 teaspoon dried cilantro (optional)
directions
Combine cheese, egg substitute, croutons, salsa, milk, garlic powder, cumin and, if desired, cilantro in a large bowl; mix until thoroughly combined.
Spray mini muffin pans with nonstick cooking spray. Fill each cup with quiche mixture, but do not overfill. Bake in a preheated 375 degrees F oven for about 25 minutes or until set and lightly browned. Cool for 5 minutes; then remove from the pan. Serve warm.
Alternative: Pour mixture into a greased 8-by 4-inch baking dish. Bake in a preheated 375 degrees F oven for about 25 minutes or until set. Cut into squares to serve.
