ingredients
1 cup water
1 tablespoon salt
3 3/4 pounds brown sugar
3 3/4 pounds white sugar
12 ounces dry egg solids
1/3 cup soda
1/3 cup cream of tartar
3 3/4 pounds margarine
2 tablespoons vanilla extract
3 cups chocolate chips
3 cups chopped nuts, if desired
directions
In 20 quart mixer bowl, place water.
Mix together salt, sugars, egg solids, soda, and cream of tartar. Add to bowl.
Mix well with paddle. Add margarine and vanilla. Mix again. Let mixer run and sprinkle in chocolate chips and nuts, if desired. Scrape down bowl sides and bottom.
Use #40 scoop and flatten a bit with fingers on greased pan.
Bake at 375 degrees F for 9 minutes. As soon as cookie flattens in oven it is done.
Remove and cool.
