Sweet Onion Sorbet

4 sweet onions, pureed
3/4 cup granulated sugar
1 1/4 cup sparkling water
1/2 teaspoon sherry vinegar
1/2 teaspoon lime zest
In a medium sauce pot, over medium heat, combine the onion puree, sugar, sparkling water, vinegar and lime zest. Heat just to dissolve the sugar. Do not bring to a boil.
Strain the onion mixture through a fine sieve. (Discard residue or reserve for use in stuffing, bread or as desired.)
Transfer the mixture to an ice cream machine. Process as directed by manufacturer until the mixture is soft frozen. Or freeze in a stainless steel container, then spoon into a blender or processor, whip until smooth and refreeze.
To serve, let sorbet soften enough to spoon into serving cups.
