Slow Cooker Mocha Mousse

ingredients

2 cups heavy cream
4 large egg yolks
3 tablespoons sugar
1 teaspoon vanilla extract
1/3 cup cold, strong brewed coffee
2 cups semisweet chocolate chips
whipped cream or berries (optional)

directions

Combine the heavy cream, egg yolks, sugar, vanilla and coffee in a 4-5 quart crockpot. Mix with a whisk until just combined. Stir in the chocolate chips.

Cover and cook on HIGH for about 1 hour, or on LOW for about 2 hours or until the chocolate is melted.

Carefully, pour the mixture in to a blender. Blend on high speed until fluffy.

Pour into serving dishes. Chill for 2 hours in the refrigerator. Top with whipped cream or berries, or serve plain.

cook's notes

Be very careful when blending hot liquids! You might want to let it cool first as steam in the blender can expand and pop the top of the blender off. Alternately, you can open the small pour hole in the blender top and cover it with a paper towel and then blend.
