ingredients
2 eggs, beaten
1/4 cup bread crumbs
salt and pepper
2 large potatoes, peeled
2 tablespoons minced onion
1 cup shredded cheddar cheese, divided
4 slices cooked bacon, crumbled and divided
directions
Combine eggs, bread crumbs, salt and pepper.
Grate potatoes and stir into egg mixture. Add onion, half of cheese, and half of bacon.
Spoon mixture into a lightly greased 1 1/2 quart casserole. Bake at 350 degrees F for 25 minutes or until potatoes are tender.
Sprinkle top with remaining cheese and bacon, bake an additional 5 minutes.
