12 red new potatoes
1 tablespoon olive oil
salt and pepper, to taste
2 tablespoons chopped parsley
directions
Preheat the oven to 350 degrees F.
Wash the potatoes and quarter them. Toss with the olive oil, salt and pepper.
Roast in the oven until tender, about 20 minutes. Sprinkle with parsley and serve.
