Oven Fried Potato Skins

ingredients
8 large baking potatoes
1/2 cup butter, melted
2 cloves garlic, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 425 degrees F.
Rinse potatoes, dry, and pierce with a fork. Place on baking sheet. Bake 50 to 60 minutes or until tender.
Cool slightly and cut in half. Cut each half into quarters. Scrape out almost all potato pulp, leaving 1/4 inch.
Combine butter, garlic, salt and pepper. Dip skins and arrange them, skin side down, on baking sheet. Bake 15 to 20 minutes or until golden brown.
Serve with a sour cream based dip (homemade or purchased).
