Barbecue Sauce
1/2 cup ketchup
1/4 cup vinegar
1/2 cup water
1 tablespoon brown sugar
2 tablespoons Dijon mustard
2 tablespoons oil
2 tablespoons Worcestershire sauce
2 teaspoons Louisiana hot sauce, more if desired
1/4 teaspoon ground cumin
1/2 teaspoon chili powder
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
Wings
oil, for deep frying
2 1/2 pounds chicken wings
directions
Combine the ketchup, vinegar, water, brown sugar, Dijon, oil, Worcestershire sauce, hot sauce, cumin, chili powder, garlic, salt, and pepper in a large saucepan or skillet. Bring to a boil then reduce the heat to a simmer. Cook for 15 minutes, stirring frequently. Keep on low heat while you cook the wings.
Meanwhile, heat oil in a deep pan (or deep fryer) to 375 degrees F. Add the chicken wings a few at a time and fry until golden brown and cooked through, about 12-15 minutes depending on the size of the wings.
Remove the wings from the oil with a slotted spoon and let drain on paper toweling. Repeat with remaining wings.
Place the cooked wings in the warm barbecue sauce and stir well to coat them. Let simmer for 2-3 minutes then remove with a slotted spoon and serve immediately with lots of napkins.
