***Filling:*** 1 cup minced onion 2 cloves garlic (minced) 1/4 cup vegetable oil (or less) 2 eggs 1/2 teaspoon salt 1 can (or fresh) mushrooms cup-up 2 tablespoons tomato paste 1/4 teaspoon black pepper ***Batter:*** 1/3 cup oil 1/2 teaspoon salt 2 eggs 1 1/4 cup milk 3 tablespoons grated Parmesan cheese 1 1/4 cup flour 1 teaspoon baking powder
Saute onions and garlic lightly in oil. Add salt, pepper, tomato paste, eggs and mushrooms. Cook, stirring until eggs are cooked. Cool.
Put ingredients into a blender or bowl and mix until smooth. Drop one tsp. of the batter in greased muffin cup, then one tsp. of filling, then another tsp. of batter (batter, filling, batter). Bake at 450 degrees F. for 10-12 min.
These appetizers may be frozen and used later. Just re-warm and enjoy.
