Directions:

In a small bowl, mix together the Gruyere, sage, oregano and pepper.

On a clean, lightly floured work surface, place the puff pastry sheet with the short side closest to you. Cut in half crosswise.

Arrange the long sides closest to you. Spread 1 tablespoon of the honey mustard on each pastry sheet, leaving a 1-inch border at the top edge. Arrange 1 ounce of pepperoni, in a single layer, over the mustard on each sheet. Top each with the cheese mixture. Brush the farthest edge of each half with the beaten egg. Roll the puff pastry tightly from the closest edge toward the egg-coated edge. Place seam-side down on baking sheet and chill about 30 minutes.

Preheat the oven to 400 degrees.

Line a baking sheet with foil or parchment paper.

Cut the logs into 1/4-inch-thick slices and arrange, cut side down, 1 inch apart on the prepared baking sheet. Bake in the middle of the oven until golden, about 14 minutes. Remove from the oven and serve warm.
