Ingredients:
Start with the chips. Good sturdy ones without salt or lightly salted works best.
Toppings:
Salsa - I like salsa casera the best but will also use salsa verde, ranchero, and chipotle as the mood strikes.
Cheese - shredded cheddar, jack, marbled or Mexican cheese.
Seasoned ground beef - I add garlic, chili powder, cumin, a little soy sauce and fresh ground pepper. All to taste.
Onions - green and/or sweet yellow chopped.
peppers - what ever you like, red, jalapeno, green.
beans - cooked and seasoned pintos, black or refried.
guacamole
sour cream - after it comes out of the oven.
green or black olives
shredded chicken
etc.

Directions:

Spread the chips in a pile over a cookie sheet, pizza pan or similar pan or serving dish and warm up in a 250-300 degree F oven until the chips just before they start to brown.

After the chips have warmed up in the oven, raise the temperature to about 350 degrees F and remove the chips. Now comes the fun part. I start spreading the toppings except for the salsa on top of the chips trying to get a nice even coverage. I will spread some cheese, then ground beef, onions, more cheese, peppers, olives then more cheese until it is piled high. Then I put some fresh ground pepper, a little cumin, chili powder and maybe some Mrs. Dash for color on top cheese layer. Just a dusting. Now I spread the salsa over the top an pop it into the oven for about 15 minutes or until the cheese bubbles and browns. Serve to your salivating guests.
