Basic Panzanella (Italian Bread Salad)

ingredients
4 ounces day-old French bread, cubed
4 plum tomatoes, chopped
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1/4 cup chopped fresh basil
1 clove garlic, minced
1/2 teaspoon salt
directions
Combine bread cubes and tomatoes in medium bowl.
Whisk together oil, vinegar, basil, garlic and salt in a small bowl. Pour over bread mixture. Toss until well mixed.
NOTE: You can substitute day-old whole wheat bread, sour dough bread or lightly toasted pita bread for the Italian or French bread. Simply cube it or tear it into small pieces.
