Sweet Chipotle Popcorn Cakes Recipe

Serves/Makes: 20
Ingredients:
1 1/2 tablespoon butter
2 tablespoons water
1/2 bag (5 ounce size) marshmallows
1 teaspoon ground chipotle pepper
11 cups salted popcorn
1 cup pecan pieces
Nonstick oil spray
Directions:
Bring the butter and water to a boil in a heavy saucepan. Stir in the marshmallows and continue stirring until they melt and brown lightly. Remove the pan from the heat and stir in the chipotle pepper. Combine the popcorn and pecans in a large bowl. Scrape the marshmallows into the bowl and mix until the popcorn and pecans are completely coated with the melted marshmallow. Allow to rest for 1 minute.
Scrape the popcorn mixture onto a cutting board. Coat your hands with oil spray and use them to form the mixture into a tightly packed 20-inch-long log. Cut into 1-inch-wide rounds.
