Garlic And Parmesan Popcorn

ingredients
2 tablespoons corn oil
2 tablespoons olive oil
2 cloves garlic, split
3/4 cup popping corn
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1 dash cayenne pepper
salt
directions
In a large heavy pot, heat corn oil and olive oil over high heat until the oil smokes. Add 1 kernel popping corn and heat until kernel pops.
Add split garlic cloves and rest of popping corn, cover pot, and shake gently until corn starts to pop. Shake vigorously until popping subsides. Remove from heat.
Remove garlic and toss popcorn with Parmesan, minced garlic, cayenne and salt.

This was delicious and a nice change of pace from the usual butter-heavy popcorn recipes. Also, it needed little salt to taste great. Next time I will probably add an extra clove of minced garlic at the end.

This recipe isn't going to knock your socks off, but it isn't intended to; its genius is in the subtlety of the flavor. I found that letting the popcorn sit covered in the pot for a few minutes after popping greatly enhanced the garlic flavor, to my delight!
