Pineapple-Carrot Rounds Recipe

Ingredients:
1 cup grated carrot
8 ounces canned unsweetened crushed pineapple, drained
3 tablespoons reduced-calorie mayonnaise
1/8 teaspoon ground cardamom
28 melba toast rounds
Directions:
Combine first 4 ingredients in a medium bowl; mix well. Cover and refrigerate until thoroughly chilled. Spread mixture on melba toast rounds; place on a serving plate. Serve immediately.
Serving size 1 melba toast round (27 calories each).
