Mozzarella With Bruschetta Vinaigrette Recipe

Ingredients:
3/4 cup bruschetta, jarred, refrigerated, or fresh
2 teaspoons red wine vinegar
2 teaspoons extra-virgin olive oil
1 teaspoon basil pesto, jarred or fresh
Kosher salt and freshly ground black pepper to taste
1 ball (8 ounce size) fresh water-packed mozzarella cheese, cut in 1/4-inch-thick slices
1 tablespoon chopped Italian (flat-leaf) parsley
Directions:
Combine the bruschetta, vinegar, oil, and pesto, and season with salt and pepper. Arrange the mozzarella slices on a plate and spoon the bruschetta sauce over the slices. Scatter the chopped parsley over the cheese. Serve at room temperature.
