Impossible Zucchini-Tomato Pie

ingredients
2 cups chopped zucchini
1 cup chopped tomato, fresh
1/2 cup chopped onion
1/3 cup grated Parmesan cheese
1 1/2 cup milk
3/4 cup bisquick baking mix
3 eggs
1/2 teaspoon salt
1/4 tablespoon black pepper
directions
Heat oven to 400 degrees F. Grease 10 inch quiche dish or pie plate 10 x 1 1/2 inches.
Sprinkle zucchini, tomato, onion, and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high, or 1 minute with hand beater. Pour into plate. Bake until knife inserted in center comes out clean - about 30 minutes. Cool 5 minutes before cutting and serving.

I'm going to bake this pie tonight, but I'm going to add more cheese, and add some herbs like dried oregano, basil and maybe fresh parsley and green onions. It's a meatless dish and without some additional flavors, it might be very bland, as zucchini usually is. Thanks for the recipe

I think the pepper ingredient should be 1/4 teaspoon instead of 1/4 tablespoon. The recipe I have calls for 1/4 teaspoon. Everything else is exactly the same, which makes me think it might be a typo.

This was a fantastic dish, healthy, and very easy to make. (I'd rate it a 2!) Didn't have a pie dish, but used an 11 inch quiche dish instead, which was perfect. I was looking to use up my veggies before they went bad & this was perfect- yummy!!
