Scalloped Zucchini

ingredients
1 small zucchini, cut up and peeled if desired.
1 egg, beaten with one fourth cup whole milk
1 ounce pepper cheese
1 small onion, chopped
2 slices white bread, torn in pieces
1 can (4 ounce size) mushrooms or fresh, sliced
1 ounce smoked sausage
directions
Mix all ingredients in a buttered casserole dish. Bake at 350 degrees F for about 30 minutes. You can vary the ingredients a little. More cheese if you choose or more sausage etc. This heats up well IF there is any left! We are seldom that lucky.
A word of caution: If you are making a very large amount for a big crowd use a large shallow pan ( or several) rather than a big deep one. I used my turkey pan to make it for a family gathering and it takes forever for the center to set and not be real runny. I have also used yellow summer squash and it works just as well.
