1 pound flank steak
1/2 can beer
5 limes
1 bunch cilantro
1 onion
1 avocado
1/4 cup sour cream
4 cloves garlic
5 tomatillos
1 large fresh jalapeno pepper
8 small corn tortillas
Dice cilantro, onion, and garlic (set aside).
Marinate steak in 3 limes, handful of cilantro and onions, beer, salt and pepper. Grill on BBQ until well done. Chop into fine pieces.
Salsa: Boil tomatillos and jalapeno in approximately 1 cup of water for about 10 minutes. Place in blender with garlic and puree. Add salt and lime to taste. (may add more jalapeno for hotter flavor). Chill.
Guacamole: Smash avocado and mix with sour cream. Add handful of cilantro and onions. Salt and lime to taste. Mix remaining amount of cilantro and onions place in bowl and set aside for tacos.
On a dry skillet, heat tortillas for approx 30 seconds each side. On plate, place tortilla, top with meat, guacamole, cilantro/onion mix, salsa, a squeeze of lime and salt to taste.
