Prawn Rolls Recipe

Serves/Makes: 4
Ingredients:
8 ounces raw prawns
2 cloves garlic, peeled
4 spring onions, chopped
2 stalks lemon grass, peeled & shredded
1 handful cilantro leaves
2 small hot red chillies, seeded
1 tablespoon flour
groundnut oil for frying
***Sauce***
6 tablespoons rice vinegar
4 tablespoons sugar
1 tablespoon dark soy sauce
2 small red chillies, deseeded & finely chopped
1 tablespoon finely chopped cilantro
1 lime, juiced
4 soft bread rolls, to serve
Directions:
Make the sauce. Heat the vinegar and sugar in a small saucepan until the sugar has dissolved and the mixture is becoming syrupy. Stir in the soy sauce and leave to cool. Add the chillies, coriander leaves and lime juice and set aside.
Put the prawns, garlic, spring onion, lemon grass, coriander, chillies, flour and a little salt into a food processor and blitz to a rough paste. Put into a bowl and set aside in the fridge for at least 30 minutes.
Divide the mixture and shape into flat patties.
Heat enough oil in a shallow pan to cover the bottom. Put in the prawn patties and let them color before gently turning. When they are crisp and golden on the outside yet still moist in the middle lift out and lay on the soft rolls. Spoon over some sauce then serve.
