There's something about a Maine lobster roll that just screams summer. Whether you're enjoying one by the beach or in your own backyard, this classic dish is the perfect way to enjoy fresh lobster.

2 cups cooked lobster meat, chopped and chilled
2 tablespoons mayonnaise
1/2 cup finely diced celery
salt and pepper, to taste
4 split top hot dog buns
soft butter
Combine the lobster, mayonnaise, and celery in a bowl. Season to taste with salt and pepper as needed. Mix well and place in the refrigerator while you prepare the buns.
Spread the outsides of the buns with butter. Heat a griddle or skillet over medium heat. Place the buns on the griddle and cook on each buttered side until toasted.
Remove the buns from the griddle and place on a platter or large plate. Open each bun and fill with the lobster mixture.
Serve immediately.
