Red Onion Marmalade

ingredients
2 large red onions, thinly sliced
3 tablespoons brown sugar
3/4 cup dry red wine
3 tablespoons balsamic vinegar
salt and black pepper, to taste
directions
In a large saucepan, combine onions and sugar and cook over moderate heat. Stir often until onions begin to caramelize and turn golden, 20 to 25 minutes.
Stir in wine and vinegar, increase heat to moderate high and bring to a boil. Reduce the heat to low and cook, stirring often, until most of the liquid has evaporated, about 15 minutes.
Season to taste with salt and pepper. Cover and refrigerate for up to 3 weeks. Serve at room temperature.
