Elderberry Jam Recipe

Serves/Makes: 3 pints
Ingredients:
2 quarts crushed elderberries
6 cups sugar
1/4 cup vinegar
Directions:
Combine berries, sugar and vinegar in a large saucepot. Bring slowly to a boil, stirring until sugar dissolves. Cook rapidly until thick. As mixture thickens, stir frequently to prevent sticking. Pour hot into hot jars, leaving 1/4 in head space. Adjust caps. Process 15 minutes in a boiling water bath.
