Ingredients:
5 ripe bananas
3 tablespoons fresh lime juice/pineapple juice
1 cup fresh orange juice or water
1 cup sugar
1 teaspoon vanilla essence (optional)
1 pinch salt

Directions:

First, you have to peel the bananas and slice thinly or mash with a fork. Then place the mashed bananas in a heavy saucepan with the lime juice, orange juice, sugar, vanilla essence and salt, and bring to a boil.

Now you need to reduce the heat and gently simmer the banana jam until thick for about 30 minutes, stirring often. Then cool to room temperature, before pouring into warm, dry jars.

The jars should be sterilized and clean before you pour in the jam and seal. You can store the jam in a cool dry place. Don't forget to refrigerate, once the jam is opened. This will keep good for many weeks.

I am sure you all will like this banana jam with a tinge of orangy taste, in your sandwiches. To enrich the taste, you can mix in cardamom powder (elaichi) to the boiled mixture.
