Italian Tomato Pie

ingredients
1 deep dish pie crust, baked
3 tomatoes, thick sliced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon basil
1 tablespoon chives
1 cup mayonnaise
8 ounces sharp Cheddar cheese, grated
6 slices fried and crumbled bacon (optional)
directions
Bake pie crust for 5 to 7 minutes in a preheated oven at 350 degrees F.
Place layer of tomatoes on bottom of pie crust and sprinkle with salt, pepper, basil and chives. Place another layer of tomatoes on top.
Combine mayonnaise and cheese and spread over tomatoes, sealing all edges. Bake in a preheated oven at 350 degrees F for 35 to 40 minutes.
Variation: A bacon tomato pie can be made by adding the strips of fried and crumbled bacon and leaving out the basil and chives. You may also want to decrease the amount of salt and pepper.
