ingredients

2 regular cans whole baby (small) beets, well drained
1 ounce bleu cheese
1 ounce roquefort cheese
3 ounces cream cheese
1 tablespoon Worcestershire sauce

directions

Have all cheeses at room temperature. Dry beets with paper towels. Hollow out centers with small paring knife.

Blend cheeses and sauce. Fill beets with mixture; sprinkle with paprika or chopped parsley.

NOTE: These should not be made too far in advance, but should be refrigerated until serving.
