INGREDIENTS:

5 cups white vinegar (5% acidity)
2 cups fresh or frozen whole blackberries
1/3 cup sugar
1/8 teaspoon salt
8 fresh mint leaves


DIRECTIONS:

In a large non aluminum pan, combine vinegar, blackberries, sugar and salt. Bring to a boil over medium high heat; boil 3 minutes. Add mint leaves.

Transfer mixture to a heatproof nonmetal container. Refrigerate 5 days to let flavors blend. Strain vinegar into gift bottles. Store in refrigerator up to 1 month.

Use to make salad dressings.
