Garlic-Flavored Fiddlehead Greens

ingredients
1 pound fiddlehead greens
2 tablespoons butter
2 tablespoons vegetable oil
6 cloves garlic, finely chopped
2 shallots, finely chopped
1 tablespoon granulated sugar
1 tablespoon soy sauce
3 tablespoons white wine
directions
In a steamer basket over boiling water, steam fiddleheads until tender, about 4 minutes. Drain and refresh under cold water. Drain and pat dry with towels.
Heat a deep heavy skillet or wok over medium heat, then add butter and oil. Heat until bubbling. Add garlic and shallots. Saute until tender, about 4 minutes.
Meanwhile, in a small bowl, stir together soy sauce, sugar and white wine until sugar dissolves. Pour over garlic and shallots and bring to boil. Add fiddleheads and heat through stirring often to glaze furled greenery.
Notes: If you don't have fiddleheads, you can substitute asparagus.
