Ingredients:
Ice water
3 quarts salted water
1/2 pound medium shrimp
1/2 pound bay scallops
1 pound calamari (cleaned, tubes cut into 1/4-inch rings)
1/2 cup wax beans (cut into 1-inch pieces)
1/2 cup string beans (cut into 1-inch pieces)
1/2 cup asparagus (cut into 1-inch pieces)
1 small zucchini (diced)
1/2 cup onion (chopped)
1/2 cup celery (diced)
1/2 cup red bell pepper (diced)
1/2 cup green olives with pimento
2 teaspoons chopped dill
2 tablespoons olive oil
1 lemon, juiced
Salt and pepper, to taste

Directions:

Fill a large bowl with ice water.

Bring the salted water to a boil.

Place the shrimp in the boiling water and cook for 1 minute. Remove from hot water and place in ice water.

Bring water back to a boil and add the calamari and the scallops. Cook for 1 minute and remove to ice water.

Bring water back to a boil (add more water if necessary).

Add the wax beans and string beans and cook for 1 minute. Add the asparagus and cook for 30 seconds more, then drain and place in ice water.

Place the cooked seafood and vegetables in a colander and drain completely.

Place the seafood, string beans, wax beans, and asparagus in a bowl. Add the zucchini, onions, celery, red bell pepper, green olives, chopped dill, olive oil, and lemon juice in a bowl and toss. Season with salt and pepper and toss again.

Refrigerate and serve when ready.
