1 cup diced melon (by preference or availability)
1 cup fresh mango, peeled and diced
1/2 serrano (or milder) chili, seeded and minced
1 teaspoon fresh mint, shredded
1 tablespoon lime juice
1/2 cup diced pineapple (fresh or canned)
1 tablespoon ground ginger
1 tablespoon fresh cilantro, chopped
Combine all ingredients in non-reactive pan and mix thoroughly. Refrigerate until serving (overnight is preferred).
