Serves/Makes:   3 cups

  

Ingredients:
1 onion finely chopped
1 tablespoon margarine
1 1/2 cup soft breadcrumbs
2 tablespoons chopped mint
1 tablespoon chopped parsley
1/4 cup fruit medley

Directions:

Saute, onion in margarine until golden. Stir in remaining ingredients, mix well and season to taste with salt and pepper.

Stuff meat. Tie into a neat shape, place on a rack in a roasting pan, and bake until juices run pink when meat is pierced with a sharp knife. Allow to stand covered in a warm place for 15 minutes before carving.
