1 cup celery, chopped
3/4 cup onion, chopped
1/4 cup butter or margarine
2 cups saltines, coarsely crushed
3/4 cup milk
1 egg, slightly beaten
1 tablespoon parsley, snipped
1 teaspoon dried sage, crushed
1/4 teaspoon dried thyme, crushed
1/2 teaspoon salt
1 dash black pepper


In a medium skillet, saute celery and onion in butter until tender. Moisten crackers with milk; add onion mixture, egg, parsley, sage, thyme, salt and pepper. Recipe sized for stuffing a chicken, may be doubled for stuffing a turkey.
