Ingredients:
1 pound sourdough bread -- cubed
1/2 cup unsalted butter
2 cups butternut squash -- peeled and cubed
1 large onion -- finely chopped
3 stalks celery -- finely chopped
1 carrot -- finely diced
1 pound Portobello mushrooms -- chopped
2 tablespoons fresh ginger root -- chopped
4 cloves garlic -- minced
2 cans smoked oysters -- drained
3/4 cup pumpkin seeds, roasted
1 cup dried cranberries
1 tablespoon rosemary
1 tablespoon sage
1 tablespoon thyme
3 cups chicken stock

Directions:

Preheat oven to 200 degrees and bake bread cubes 1 hour.

Melt butter in a large pan. Cook squash, onion, celery and carrot 10 minutes over medium heat. Add mushrooms, ginger and garlic and cook 3 minutes longer. Add remaining ingredients, including bread, except chicken stock. Stir well and cook 4 minutes. Add stock, one cup at a time until absorbed. Place in a large baking dish and bake at 350 degrees for 45 minutes.
