Serves/Makes:   36 pcs

  

Ingredients:
salt
4 ounces crabmeat (flaked and cooked)
3 tablespoons light corn syrup (light corn syrup or sugar syrup)
pepper
1 cup rice vermicelli (cooked and chopped)
36 egg roll wrappers
lettuce leaves
Nuoc cham sauce
1/2 cup scallions (green/spring onions) (minced)
1 carrot (grated)
1 egg (beaten)
1 cup basil leaves
1 cup fresh coriander (cilantro)
8 ounces chicken breast (minced)

Directions:

Mix chicken, crabmeat, scallions, vermicelli, carrot and egg.

Season with salt and pepper.

Soften wrappers by dipping into cold water; drain well.

Brush one side of each wrapper with sugar syrup.

Place a portion of filling in the center and wrap.

Deep-fry until crisp, golden and cooked through.

To serve, wrap each roll in a lettuce leaf with sprigs of each of the herbs.

Dip into nuoc cham sauce.
