1 medium green bell pepper, chopped
1 medium onion, chopped
1 cup celery, chopped
1 medium red bell pepper, chopped
3 cups cooked seafood (crab meat, shrimp, lobster, oysters)
salt and pepper
1 teaspoon Worcestershire sauce
1 cup mayonnaise
1 cup bread crumbs
3 tablespoons Parmesan cheese
1 teaspoon parsley
4 tablespoons butter
directions
Saute onion in 2 tablespoons butter until tender.
Mix together peppers, celery, seafood, seasonings (no cheese), Worcestershire sauce and sauteed onions. Stir in mayonnaise. Mix well to blend. Pour into casserole or individual custard cups, ramekins or souffle dishes. Mix crumbs with remaining melted butter and Parmesan cheese.
Bake 350 degrees F for 30 minutes.

Could you use fresh uncooked fish and just bake for a longer time?
Uncooked fish is going to give it a very fishy taste

Tasty and easy to make. I used cubed bread rather than bread crumbs and reduced the fat by using Light Mayo, and substituted 1/2 the butter for olive oil. If I make it again I would saute all the vegetables together to avoid the "crunchiness" for the anti-vegetable-lover males in my house. Although the boys said they were not fond of the recipe, they managed to devour the entire casserole in one sitting.
