INGREDIENTS:

3 cups cooked rice
1 egg yolk
1 teaspoon curry powder
1 green bell pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons unsalted butter
1/4 teaspoon cayenne pepper
1 onion
1/2 teaspoon turmeric


DIRECTIONS:

Saute onion and green pepper in butter until onion is tender. Stir in curry powder, turmeric, slightly beaten egg, salt, pepper and cayenne. Mix into hot rice.

Absolutely fantastic. I used 1/2 red bell pepper and 1/2 green bell pepper to add color. Also, I used a red onion (more flavorful). Before sauteing these ingredients, I slightly processed them. I will never have rice any other way again.

Tried this recipe and it was not only easy but absolutely delicious! You can add meat such as diced chicken or shrimp to it and make it a main dish.

bomb diggity! i added 1/2 can of cream of mushroom soup and 1/4 cup of milk. served on top/side of rice.

I tried it, but I think that I messed it up. What should I do differently if I end up with a bunch of spices mixed in with crude scrambled eggs?
CDKitchen Note: Stir the spices until blended, then stir in the egg and scramble, then continue with the recipe. That method will distribute the spices better.
