Baked Rice

ingredients
1/2 cup butter or margarine
1/2 cup chopped onions
3 tablespoons chicken bouillon powder
salt and pepper, to taste
poultry seasoning to taste
1 cup chopped celery
1 cup raw rice
2 cups boiling water
directions
For those who have difficulty cooking rice, like I do, this recipe is great! You can prepare it, put it to bake, and finish preparing the rest of your dinner in the meantime.
Melt butter in skillet over medium heat. Add onions, celery, and rice and saute till rice is light golden brown. In separate bowl, mix soup mix, salt and pepper, and poultry seasoning with boiling water. Pour rice mixture in a casserole dish and pour soup mixture over. DO NOT STIR TOGETHER.
Cover and bake at 350 degrees F for 45 minutes or till liquid is absorbed. Remove from oven and mix before serving.
This recipe is great with sweet and sour meatballs or chicken. You can also use different soup mixes for different flavors and dishes.

A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

This recipe is similiar to what we in SC call perlow. I added some finely chopped chicken breasts, peas and carrots along with the onion. I omitted the celery. I served steamed broccoli along with this. It's very easy and fast. I'll be using the recipe again!:-)
