Asian Rice Recipe

Ingredients:
1 tablespoon vegetable oil
2 carrots, peeled and thinly sliced
1 cup green onions, sliced
3 cups cooked rice
5 roasted garlic cloves, peeled and mashed
2 roasted red pepper quarters, diced
1 teaspoon ground ginger
2 cups diced roasted ham
1 cup diced roasted chicken
2 tablespoons rice or cider vinegar
1 tablespoon soy sauce
1/4 teaspoon salt
1/4 cup coarsely chopped peanuts
Directions:
In a large skillet, heat the oil over medium heat. Add the carrots and onions. Cook, stirring, 5 minutes. Stir in the rice, garlic, peppers, and ginger. Cook, stirring constantly, until the rice is hot and begins to get crusty. Stir in the ham and chicken. In a small bowl, stir together the vinegar, soy sauce, and salt. Add to the pan and stir until the rice is coated. Stir in the peanuts and serve.
