Ingredients:
2 cups chopped lobster
1/4 cup melted butter, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
6 tablespoons butter
2 tablespoons flour
1 1/2 cup light cream
salt and pepper to taste
4 egg yolks, well beaten
1 pastry for single-crust pie

Directions:

Saute lobster in melted butter until heated through. Melt the rest of the butter in saucepan; stir in flour until smooth. Add cream, salt and pepper; cook, stirring constantly, until smooth and thickened.

Stir small amount hot mixture into egg yolks, then stir back into sauce.

Add lobster; turn into casserole. Cover with pie crust. Bake at 375 F until crust is browned.
