1/4 cup butter or margarine
1/4 cup flour
2 cups milk
1 teaspoon salt
1/4 teaspoon black pepper
3/4 cup chopped green onions
1 (8 ounce wedge) sharp cheddar cheese, shredded
6 cups sliced, cooked potatoes
1 green bell pepper, cut in rings
1/2 cup barbecue sauce


Make cream sauce with butter, flour, milk and seasonings. Add onions and cheese; stir until cheese is melted. Alternate layers of potatoes and cheese sauce in a 12 x 8 inch baking dish. Top with green pepper rings and Barbecue sauce. Bake at 350 degrees, 25 to 30 minutes.
