Chips Supreme Recipe

Serves/Makes: 4
Ingredients:
1 package (6 oz size) potato chips or crisps
1 can (2.25 oz size) sliced black olives, drained
1 cup shredded Mexican cheese, blend
1/2 cup sliced jalapeno peppers
1 small tomato, chopped and drained
Directions:
Preheat the oven to 400 degrees.
Spread out the potato chips on a large rimmed baking sheet. Top evenly with the olives and cheese.
Bake for 3 to 4 minutes or until the cheese has melted. Remove from the oven and top with the jalapeno peppers and chopped tomato.
Cook's Note: To make these lighter, use a reduced fat or even a fat free potato chip, as well as a light type of cheese blend or simply reduce the amount of cheese used.
