Baked Parmesan Potatoes Recipe

Serves/Makes: 4
Ingredients:
4 Potatoes, large
2 tablespoons Butter, melted
Salt and pepper, to taste
1/4 cup Parmesan cheese, grated
2 tablespoons Italian-style breadcrumbs
Directions:
Preheat the oven to 375. Slice the washed potatoes 3/4 of the way through (about 1/4 inch thick).
Place on a lightly oiled baking sheet. Drizzle the butter over the potatoes. Season. Bake for 45 minutes.
Mix together the cheese and breadcrumbs. Sprinkle over the potatoes, return to the oven and bake for 20 minutes longer (or until lightly browned). Serve warm.
Serve these potatoes as a side dish with roast beef or pork.
