Ingredients:
1 jar (15-ounce size) unsweetened applesauce, divided
1 package (4-serving-size) raspberry-flavored or other red gelatin dessert
1 package (4-serving-size) lime-flavored or other green gelatin dessert
14 graham crackers (5-by-2 1/2-inch size)
1 container (16-ounce size) regular, low-fat or fat-free frozen whipped topping, thawed
sweetened flaked coconut, optional

Directions:

In a small bowl, mix half of the applesauce with the dry red gelatin. In another bowl, mix the remaining applesauce with the dry green gelatin.

Place 2 graham crackers side by side on a serving plate. Top with about 1/3 cup red applesauce. Add a layer of graham crackers; top with about 1/3 cup green applesauce. Repeat those layers twice, then finish with a layer of graham crackers.

Ice the loaf with whipped topping; sprinkle with coconut. Refrigerate for at least 2 hours or overnight. Just before serving, slice on the diagonal.

PER SERVING: 340 calories; 12g fat (32 percent calories from fat); 10g saturated fat; no cholesterol; 3.5g protein; 55.5g carbohydrate; 34g sugar; 1.5g fiber; 203mg sodium; 7.5mg calcium; 73mg potassium.
